Cheesy Cheeseburger Soup

I am honestly not sure where I got this recipe from in the first place – could’ve been My Wooden Spoon or Lisa Cooking but who knows. Point is – I’m going to share it RIGHT HERE because my menu plan for this week includes it and it’s super duper yummy!

Cheesy Cheeseburger Soup

1/2 pound lean ground beef
4 c peeled, diced potatoes
non stick cooking spray
1 c reduced fat American cheese
3/4 c chopped onions
1 1/2 c skim milk
1/4 c chopped carrots
1/ c fat free sour cream
3/4 c chopped celery
1/4 t pepper
3 c reduced sodium chicken broth

In a skillet, brown the hamburger, drain it well and set it aside. Spray a stock pot with nonstick spray. Add the onions, carrots and celery, sauté until tender. Add the chicken broth, potatoes, and hamburger to the stock pot and bring to a boil.

Reduce the heat, cover and simmer 10-12 minutes or until the potatoes are tender. Reduce the heat to low. Stir in the cheese, milk, sour cream and pepper. Heat through, but do not boil.

Makes 8 (1 1/2 c) servings.
