I made meatloaf last night for supper and happily ended up with enough leftover loaf for another meal. So, I think I’m going to freeze it! I only made enough mashed potatoes for that one meal – but they were OH so good! Meatloaf and potatoes is an excellent cheap (and filling) meal!

I think we’ve already spent the food budget for the rest of the month. Whoops! Shouldn’t have gone to Ruby Tuesday’s the other day – BAD IDEA! I just spent $47 at Wal-Mart and had to put the $7 on a credit card (which I need to pay right away) because I only had $40 in cash. But – I got enough food for awhile – as long as I add it to what we have.

Impossible Cheeseburger Pie
Source: The Best of Bisquick from Betty Crocker Favorites from the past and present (1983)
Ingredients:
1 pound ground beef
1 1/2 cups chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups milk
3 eggs
3/4 cup Bisquick baking mix
2 tomatoes, sliced
1 cup shredded Cheddar
Directions:
Heat oven to 400*F. Grease pie plate, 10 x 1 1/2 inches.

If you like Doritos and American-style Mexican food then this super easy to make casserole is for you! Even better – it makes great leftovers!
Ingredients:
1 large 13-ounce package of Doritos (save 2 cups for casserole topping
2 tbsp. onion, grated
1 10-ounce can of chili with bean
1 lb of chopped meat
10- to 15-ounce enchilada sauce
8-ounce can tomato sauce
1½ cups of shredded sharp cheddar cheese
